Smoked Provola (Mandarin)
Stretched curd cheese made with pasteurized cow's milk. The paste is tender and consistent when cut, white in color and sweet in taste. On the outside it has a thin amber-colored crust given by smoking.
After spinning, the dough is processed manually to give the product the classic shape of a large mandarin and placed in brine for 6 hours. It is then smoked with the aroma of liquid smoke and left to mature for about 10 days before being packaged. The milk used to make it comes exclusively from Sicilian pastures and is produced without the use of preservatives.
